Spinach Kale Egg and Veggie Salad
My husband sometimes jokes around saying that he married me for my salads. We recently had some friends over for dinner and I prepared a salad to share. I rarely make the same salad twice as I enjoy rotating between various ingredients and colors. This salad may become a repeat in our home, however, because we all loved it.
- Fresh organic spinach leaves
- Fresh kale, chopped
- Organic carrots, grated
- Organic tomatoes, sliced
- Cucumber, sliced
- Red pepper, sliced
- Organic hard boiled eggs, crumbled
- Unsalted sunflower seeds
Dressing: I created a home made dressing to pour over the top using organic buttermilk, plain yogurt, organic dill and organic agave.
